San Martino organic farm was established in 1989 and since then has been producing, processing and selling its products, all from organic agriculture. In 1996 San Martino achieved its certification from Bioagricert as far as the largest walnut grove of the Chandler variety in Italy is concerned. Thirty hectares of irrigated land, completely mechanized and organic, lie on a fertile plain at the feet of the most beautiful valley of central Romagna- in between Valle del Bidente and Valle del Montone – nearby Bertinoro, Predappio and Terra del Sole. Terre di Romagna organic walnuts grow therefore in these ancient lands- well-known for the quality of their products- While still green, they are macerated for two long years in order to get Nocino Terre di Romagna, a fine walnut liqueur.

From very old traditions, here is NOCINO

Nocino is a liqueur from very old traditions whose preparation dates back to the past when country women gathered on St. John’s day – June 24th – to collect the walnut hulls, still green and possibly covered with the early morning dew. The classic Nocino recipe dates back to Artusi, the famous gourmet from Forlimpopoli and author of the book “ Science in the kitchen and the art of eating well” which represented a real breakthrough in the gastronomic culture of the time.  Artusi is still today a gourmet Master for the cleverness with which he  was able to give emphasis and  dignity to all regional traditions and his efforts to join them into a national gastronomic tradition. It’s in this context that Nocino for examples is described as one of the most usual home- made liqueurs, balsamic and medicinal for containing the essential oils and vitamins of the walnut hulls collected on that particular day of the year.


Walnut and its properties

The walnut infusion is still today considered an effective remedy for treating the gastroenteric system. Today’s phytotherapy recommends the medicinal use of almost all parts of the walnut. A diuretic and laxative juice is extracted from the roots, the bark has got haematic properties, the leaves are recognized febrifuges and vermifuges, the unripe hull is used for treating liver ailments. The fruit of the walnut is a small treasure of nature, a delicacy rich in precious salutary substances. High concentration of Omega 3 fat acids, vitamin E and arginine make it a unique food product that can contribute to our well-being and reduce, in particular, the risks of cardiovascular diseases. 

 

Organic NOCINO “ Terre di Romagna”

Still unripe walnuts are collected in the month of June, are then sliced and put into an alcohol infusion where they macerate for almost one year. The product is then pressed by means of wooden presses to extract the infusion which will be left ripe for another 9 months in stainless steel tanks. It is then transformed into 40 Vol. Nocino by adding water, sugar, alcohol and spices. Dark brown in color, pleasant aromatic as a taste with a strong fragrance. Our Nocino is produced only with organic walnuts under the total control of the processing chain. Perfect at the end of a meal, Nocino can also be enjoyed chilled or with ice added. Delicious also on top of ice-cream!
